fail spanakopita?

I love greek food. I love spanakopita. So i decided to make some spanakopita ala vegan.  Spanakopita is normally a spinach and feta cheese pie, i substituted a homemade tofu cheese instead of feta.  It looks a little fail, because philo dough is a pain in the tukus to work with. But i did it and its was pretty darn good.

I always make more food than i can eat which is a bit of an issue but it doesnt go to waste. In other new batlimore is melting. Its roughly 90 and humidly  as all. Which has resulted in a lack of motivation. 

Any good summer recipes? GIVE THEM TO ME! please…

bread baking fun

So, last week I decided to try my buckwheat banana bread recipe (my first baking recipe ever) in my bread maker even though I usually make it in the oven. I thought that maybe it would come out better? Well, it looked better, but I still need to get the hang of the bread maker..

It pushed all the cranberries to the side and took way longer to bake then it should have.

That was last week. Yesterday, I tried baking some rye bread for the first time. It finished baking on time, but I don’t think the rye to yeast ratio was right.. The bread came out a little sad looking. It is delicious though! All packed up for lunch at work.

Gazpacho and Cupcakes!

 

Saturday I went to the farms market and they had like 18 tomatillos for 2 or 3 dollars. Got some cilantro  and some tomatoes. It was pretty tastey. I aslo made a nice walnut pesto.

THEN today I made blueberry swirl cupcakes. SO tasty, with a nice blueberry glaze for my friend Melinda who is moving.

Vegetable Ice Cream

So several weeks ago i was eating at one of my favorite ice cream spots in Charles village and which has soy ice cream as well as vegtable ice cream I am a hughe fan of Dominion’s (Mya introduced me to Dominion’s). So i was interviewed at the ice cream shop and they quoted me. Its a really good article, because its about ice cream DUH!

Lucky me! I found a brand new breadmaker for $1.80!! My first super excited attempt with Elise failed miserably due to a lack of proper ingredients, but my gluten-free Lemon Poppyseed Bread came out wonderfully for breakfast this morning. Eeeek!!

Pumpkin Chocolate chip CUPCAKES

These lil’ sukers were a special request by my friend, because she is leaving soon  and i wanted to make something special for her. She asked for some kinda berry cupcakes but the market was closed today and did want to get berries from some major chain grocer even thought i love that chain grocer, not for my produce. So she said pumpkin and i happened to have 2 cans of condensed pumpkin in my cabinet.  So i brought them to my friends going away party tonight and they were a hit! 

 

Overall it was a great night with good friends and lots of good food.

3 punks in a kitchen

Lucas has been itching to make this veggie burger recipe his parents used to make when he was growing up don’t you all wish your parents raised you vegetarian. With some tweaking of the recipe we made it vegan the original recipe called for eggs but we tinkered it . So the 3 of us went to work on the burgers with some fail they turned out so yummy!
